gluten free cookies n’ cream ice cream recipe

the easiest homemade ice cream! highly doubt it but…if you don’t like cookies n’ cream you can do without the cookie topping and opt for a simple vanilla flavor or add a different topping. 🙂 

RECIPE
2 cups heavy cream
1 cup milk
1/2 cup maple syrup
3 egg yolks
1 tablespoon vanilla extract
gluten free cookies (I used the @simplemills cocoa cashew crème sandwich cookies)

1. mix ingredients together in a large bowl
2. add mixture to ice cream maker *check the instructions on your ice cream maker. mine has a double-insulated freezer bowl and I needed to keep it frozen before this step. 
3. turn on the ice cream maker and let it churn for ~15min or until you notice a more creamy consistency.
4. add toppings
5. place into a bowl and freeze for 4+ hours.
6. when ready to eat, let ice cream cool for ~5min before serving
