Gluten-Free Buffalo Chicken Bites

Ingredients
  

For the Chicken:

  • 1 lb chicken
  • ¼ cup panko breadcrumbs
  • ¼ cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon parsley
  • ½ teaspoon salt
  • teaspoon pepper
  • 1 egg

For the Sauce (Use More if Needed):

  • 2 tablespoons butter melted
  • ½ cup buffalo sauce
  • 1 tablespoon cornstarch

Sides:

  • Celery sticks
  • Carrots
  • Ranch sauce

Instructions
 

  • Preheat oven to 375°F.
  • In a medium bowl, mix all ingredients for the chicken.
  • Using a tablespoon for measurement, scoop and roll the chicken mixture into balls and place them on a baking sheet.
  • Bake for 25-30 minutes or until the chicken is cooked through (can also use an air fryer).
  • While the chicken bites are baking, make the sauce by heating the butter, buffalo sauce, and cornstarch over the stove.
  • Once the chicken is ready, remove from the oven and mix with the sauce.
  • Serve with celery sticks, carrots, and ranch sauce on the side.
