Preheat oven to 375°F.
In a medium bowl, mix all ingredients for the chicken.
Using a tablespoon for measurement, scoop and roll the chicken mixture into balls and place them on a baking sheet.
Bake for 25-30 minutes or until the chicken is cooked through (can also use an air fryer).
While the chicken bites are baking, make the sauce by heating the butter, buffalo sauce, and cornstarch over the stove.
Once the chicken is ready, remove from the oven and mix with the sauce.
Serve with celery sticks, carrots, and ranch sauce on the side.
