
Mom’s Lemony Cabbage Salad
This bright, crunchy cabbage salad is one of those recipes I grew up eating and still crave to this day. It’s simple, fresh, and packed with lemony flavor from just a handful of ingredients. We usually serve it alongside fish, but it pairs beautifully with grilled meats, rice dishes, or enjoyed on its own.
Ingredients
- ½ head cabbage thinly sliced
- 2-3 carrots grated
- ½ bunch parsley finely sliced
- ½ bunch cilantro finely sliced
- Juice of 1 lemon
- 1-2 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Thinly slice the cabbage and add to a large bowl. A cabbage peeler or mandoline works great for extra thin slices.
- Grate the carrots and add them to the bowl.
- Finely slice the parsley and cilantro, then add them in.
- Pour over the lemon juice and olive oil. Season with salt and pepper to taste.
- Using clean hands or tongs, toss well and gently massage the dressing into the cabbage to help soften it and build flavor.
- Serve and enjoy!
