Ani’s 5-Ingredient Almond Flour and Chocolate Cookies, [Paleo, Vegan]

I’m so excited to finally share this recipe with you all. I baked these cookies probably around 10 times testing out different variations (ie. with or without salt) and I finally came up with *the* recipe!

They’ve have been such a hit for my family! Today I overheard my grandma on the phone with her friend telling her about them, and I thought that was so sweet. I’m also proud to say that my 10-year-old niece even liked them, and so did my mom who is actually a very picky eater. All that to say, I’m confident you’ll love them, too! They’re paleo friendly and they’re a delicious treat with a cup of tea or coffee.

These cookies are incredibly soft and chewy, even two days after baking. If you like chewy cookies like me, be sure to take them out of the oven as soon as you see the golden brown edges (which has consistently been at 12 min for me).

DIRECTIONS:

  1. Preheat the oven at 375 degrees.
  2. Mix almond flour, salt, and baking soda in a large bowl. I just used a whisk for this! You can use a fork, too. No need to use a mixer but feel free to if you have one.
  3. Add in coconut oil and maple syrup. Continue mixing.
  4. The dough will start to separate into little pieces––this is normal! Use your hands to sort of squish and mash the dough into one big piece.
  5. Use a scooper to scoop out the dough one by one onto your pan.
  6. Once all the cookie dough is placed on the pan, with the palm of your hand, press down on each piece of dough to form them into circular cookie shapes. Don’t worry about them being to close together as they will not expand in the oven.
  7. Press down the middle of the cookie with your finger, so that there’s a space for you to fill the chocolate in.
  8. To create the chocolate topping: in a separate bowl, mix the 2 tablespoons of maple syrup with the 2 tablespoons of cacao powder.
  9. Pour chocolate into the middle of each cookie in the holes you formed.
  10. Place in the oven and leave for 10-12 minutes or until the sides are golden brown.
  11. Take out of the oven and enjoy with your loved ones. Anoosh lini, as we say in Armenian (which means “may it be sweet”). 🙂
