
Armenian Meat Turnovers (Xachapouri / Byorek)
Ingredients
- 1 lb ground beef
- ~10 puff pastry squares thawed if frozen
- 1 medium onion finely diced
- ½ cup water
- up to 1 teaspoon each salt black pepper, Aleppo pepper adjust to taste
- 3 egg yolks for egg wash
- sesame seeds for topping
Instructions
Prepare the ground beef filling
- In a skillet or pot, add the ground beef and pour in ½ cup water.
- Cook for a few minutes until the meat absorbs the liquid.
- Stir in the diced onion and continue cooking until softened.
- Season with salt, black pepper, and Aleppo pepper to taste.
- Remove from heat and let cool.
Assemble the pastries
- Preheat oven to 375°F (190°C)
- Cut each puff pastry square into 2 triangles.
- Place a spoonful of filling in the center of each triangle.
- Fold and pinch the edges together to seal, leaving a little opening at the top if you’d like the filling to show.
- Repeat with remaining pastry squares and filling.
Finish and bake
- Beat egg yolks and brush them over the tops of the pastries.
- Sprinkle sesame seeds on top.
- Bake for 30-35 minutes, or until the pastry is puffed and golden brown.
Serve
- Let cool slightly and enjoy warm.
