Armenian Meat Turnovers (Xachapouri / Byorek)

Ingredients
  

  • 1 lb ground beef
  • ~10 puff pastry squares thawed if frozen
  • 1 medium onion finely diced
  • ½ cup water
  • up to 1 teaspoon each salt black pepper, Aleppo pepper adjust to taste
  • 3 egg yolks for egg wash
  • sesame seeds for topping

Instructions
 

Prepare the ground beef filling

  • In a skillet or pot, add the ground beef and pour in ½ cup water.
  • Cook for a few minutes until the meat absorbs the liquid.
  • Stir in the diced onion and continue cooking until softened.
  • Season with salt, black pepper, and Aleppo pepper to taste.
  • Remove from heat and let cool.

Assemble the pastries

  • Preheat oven to 375°F (190°C)
  • Cut each puff pastry square into 2 triangles.
  • Place a spoonful of filling in the center of each triangle.
  • Fold and pinch the edges together to seal, leaving a little opening at the top if you’d like the filling to show.
  • Repeat with remaining pastry squares and filling.

Finish and bake

  • Beat egg yolks and brush them over the tops of the pastries.
  • Sprinkle sesame seeds on top.
  • Bake for 30-35 minutes, or until the pastry is puffed and golden brown.

Serve

  • Let cool slightly and enjoy warm.
