
Persimmon & Prosciutto Bites
Ingredients
- 2 ripe persimmons peeled
- 1 packet prosciutto about 8-10 slices
- fresh mint leaves
- olive oil for drizzling
- sea salt for sprinkling
- cocktail picks optional, for serving
Instructions
- Prep the persimmons: Peel the 2 persimmons, then slice them into small wedges.
- Prep the prosciutto: Tear or cut each slice of prosciutto in half so it’s easier to wrap each wedge without overpowering the fruit.
- Assemble: Place one fresh mint leaf on each persimmon wedge. Gently wrap the wedge with half a slice of prosciutto, securing it around the mint.
- Plate: Arrange the wrapped wedges on a serving platter. Drizzle lightly with olive oil and finish with a pinch of sea salt.
- Serve: Add cocktail picks for easy serving, if desired.
