ripe persimmons
peeled

packet prosciutto
about 8-10 slices
fresh mint leaves
olive oil
for drizzling
sea salt
for sprinkling

Instructions
Prep the persimmons:
Peel the
2 persimmons
, then slice them into small wedges.
Prep the prosciutto
: Tear or cut each slice of prosciutto in half so it’s easier to wrap each wedge without overpowering the fruit.
Assemble
: Place one fresh mint leaf on each persimmon wedge. Gently wrap the wedge with half a slice of prosciutto, securing it around the mint.
Plate
: Arrange the wrapped wedges on a serving platter. Drizzle lightly with olive oil and finish with a pinch of sea salt.
Serve
: Add cocktail picks for easy serving, if desired.
