Persimmon & Prosciutto Bites

Ingredients
  

  • 2 ripe persimmons peeled
  • 1 packet prosciutto about 8-10 slices
  • fresh mint leaves
  • olive oil for drizzling
  • sea salt for sprinkling
  • cocktail picks optional, for serving

Instructions
 

  • Prep the persimmons: Peel the 2 persimmons, then slice them into small wedges.
  • Prep the prosciutto: Tear or cut each slice of prosciutto in half so it’s easier to wrap each wedge without overpowering the fruit.
  • Assemble: Place one fresh mint leaf on each persimmon wedge. Gently wrap the wedge with half a slice of prosciutto, securing it around the mint.
  • Plate: Arrange the wrapped wedges on a serving platter. Drizzle lightly with olive oil and finish with a pinch of sea salt.
  • Serve: Add cocktail picks for easy serving, if desired.
